6 medium bell peppers
1/4 C butter
1 large onion, chopped
1/2 C celery, chopped
1/4 C parsley, chopped
1 lb crab meat
cayenne pepper
1 C breadcrumbs, moistened
1/4 C Parmesan cheese
salt to taste

Directions:
Directions:
Wash bell peppers and remove tops and seeds. Cut into halves if desired.
Parboil until just tender. In a medium saucepan melt butter; then add onions, celery, and parsley. Mix in crab meat, salt, and cayenne pepper to taste. Add 1/2 C breadcrumbs. Fill bell pepper shells with stuffing mixture. Top off by sprinkling Parmesan cheese and remaining breadcrumbs. Place in greased, shallow pan and bake at 300º for a few minutes
