2 teaspoons dijon mustard
2 teaspoons cider vinegar
1 teaspoon kosher salt
1/4 cup olive oil
1/2 cup soft tofu

1/2 cup of mixed chopped chives, parsley and chervil.

Directions:

Pulse dijon mustard, cider vinegar, kosher salt, olive oil, tofu in a blender until smooth. Stir in the mixed chopped herbs.
