1 lb. macaroni
2 c. cheddar (sharp or mild)
3 tbsp. flour
1 tbsp. butter
1 1/2 c. milk
1/4 tsp. nutmeg (add more to taste)
1/4 tsp. cayenne pepper (add more to taste)

Directions:
Directions:
Cook and drain macaroni. Melt butter, stir in flour 1 tbsp. at a time to ensure mixed well. It will bubble and start to brown add milk 1/4 cup at a time. Mix well. Add nutmeg and cayenne pepper and stir in cheese. Stir until melted. Mix in noodles.
