2 cups peeled & shredded Potatoes
2 tbsp. Dry Onion Soup Mix
2 cloves Garlic - minced
2 Eggs - beaten
2 tbsp. Flour
1/3 cup shredded Cheese
1 tsp Salt
Cracked Black Pepper

1/2 cup Oil
Sour Cream

Directions:
Directions:
Place shredded potatoes in bowl of cold water (removes starch) - let sit for 5 - 10 minutes.
Drain potatoes and put in a clean cloth - wring as much moisture out as possible.
Place potatoes in a bowl and stir in the onion soup mix, garlic, eggs, flour, cheese, salt & pepper until well mixed.

Heat oil (don't need the whole 1/2 cup - can add some as you go) in a large skillet until it simmers.
Drop the potato mixture by the heaping tablespoons into the hot oil and press down on the patties to flatten them to about 1/3" thick.
Fry until golden brown and crisp on the bottom (5 - 7 min?) then flip and cook the other side until crisp & golden.
Remove to a paper towel to drain and serve hot, sprinkled with green onion and a small dollop of sour cream.
