For Roasted Garlic:
1 head garlic
Olive oil

For Vinaigrette:
2 tablespoons red wine vinegar
2 teaspoons dijon mustard
1/2 teaspoon kosher salt
pepper to taste
1 head roasted garlic (above)
3 tablespoons grated Parmesan

1/3 to 1/2 cup olive oil

Directions:
Directions:
For Roasted Garlic:
Slice the top off 1 head garlic; drizzle with olive oil, wrap in aluminum foil and roast at 400 degrees F until tender about 35 minutes. Cool, then squeeze out the cloves.

Add all ingredients in blender (except oil) and blend together. With blender on, gradually add olive oil.
