Ingredients:  
1 cup (soft packed) finely chopped carrot tops (greens, preferably organic)
2 teaspoons dried oregano (not ground)
¼ teaspoon cumin
1 teaspoon ground sweet paprika
½ teaspoon crushed red pepper flakes
1 garlic clove, minced
1 teaspoon salt
a few grinds of pepper
1/3 cup white wine vinegar
1/3 cup olive oil (a good fruity one)

Directions:

Wash and dry your carrot tops well. Finely chop them and measure out the 1 cup that is softly packed. Put them in a pint sized mason jar and add all of the dried spices and minced garlic. Add the oil and vinegar, and stir. Taste and adjust seasonings.

Serve with roasted veggies, toasted GF bread, or over steaks or grilled fish.
