4 strips bacon (I use smoked apple wood)
1 large sweet onion, halved and thinly sliced
1½ cups regular dried elbow macaroni 6 oz.
2 cups shredded mozzarella cheese, 8 oz.
4 oz. Gruyére cheese shredded or blue cheese crumbled (the best is when I used a smoked Gruyére)
1 up half and half or light cream
1/8 t. black pepper

In large skillet cook bacon until crisp. Drain bacon, crumble. Reserve bacon drippings in skillet.

Cook onion in reserved bacon drippings over medium heat for 5 to 8 minutes or until onion is tender and golden brown. Set aside.

In a large saucepan cook macaroni according to directions. Drain and return to saucepan. Stir in crumbled bacon, onion, 1 ½ cups of the mozzarella cheese, the Gruyére cheese and the half and half and pepper. Toss gently to combine. Spoon into a 1 ½ quart casserole.

Bake, uncovered in a 350°F oven for 20 minutes. Stir gently. Top with remaining mozzarella cheese. Bake about 10 minutes more or until top of casserole is brown and bubbly. Let stand 10 min
