4 ribs celery
2 green bell peppers
3 poblano chilies
2 yellow onions
3 cloves garlic, minced
1 jalapeno, diced
2.5 lbs ground turkey
4 c. white beans
2 qt. chicken stock
5 T. butter
5 T. flour
1 T. fresh thyme
3 T. fresh cilantro
1 c. pepper jack cheese
2 limes, juiced
Salt and pepper
Olive oil for sautéing

Directions:
Directions:
Dice celery, green peppers, poblanos, and onions.

Sauté in olive oil over medium heat until vegetables soften (about 10 minutes) in a large soup pot.

Add minced garlic.

Meanwhile, season turkey with salt and pepper and brown in a sauté pan.

Drain.

Add butter to vegetables.

When butter is melted, sprinkle flour over vegetables and cook 3 minutes

Slowly add chicken stock, whisking to prevent lumps.

Bring to a boil and boil while whisking constantly 5 minutes, until stock thickens.

Reduce heat to simmer and simmer covered for 20 minutes.

Add jalapenos, cooked beans, ground turkey, thyme, and season with salt and pepper.

Right before serving, stir in cilantro, cheese, and lime juice.
