1 C sugar minus 2 TBS
1/4 C cornstarch
pinch of salt
4 egg yolks
2 C milk, divided
2 TBS butter
1 1/3 tsp vanilla
1 (3 1/2 oz) can Angel Flake coconut

Directions:
Directions:
Mix sugar, salt, and cornstarch. Stir in 1 1/2 Cups of the milk. Beat egg yolks and add remaining 1/2 cup of milk. Blend well and add to sugar mix. Add butter and cook on medium heat until it begins to thicken. Remove from heat and beat until it is smooth. Add vanilla and coconut, reserving enough coconut to put over meringue. Let cool then pour into cooked crust.
