1 lb - lean Ground Beef
optional - add some chopped up fried Italian Sausage
1 chopped Onion
2 cans (19 oz/540 ml each) 1-Black Beans - drained & rinsed, 1-Kidney Beans
1 can (15 oz) Corn
1 can diced Tomatoes - undrained
1 (8 oz) can Tomato Sauce
1 pkg Taco Seasoning Mix (2 Tbsp)
2 cups Beef Stock
1 cup shredded Tex Mex Cheese
Garlic clove (of course)
Rotel - if desired

Options: add some chopped Pepper and Carrots

Toppings:
Avacado, Cheese, Cilantro, Sour Cream, Tortilla Chips

Directions:
Directions:
Brown meat with onions & garlic in a large pan.

Stir in all remaining ingredients except cheese. Bring to a boil then simmer - (in your crock pot - Dani) :) for 1/2 hr or so to let the flavors absorb.

Serve topped with cheese. (can add a dab of sour cream when serving if you desire)
