1/2 cup butter, softened
1/4 sup packed brown suger
1 egg
1/2 tsp vanilla extract
1 cup all-purpose flour
1/4 cup shredded coconut
2/3 cup jam (I like to use raspberry)
1/4 tsp salt

Directions:
Directions:
Preheat oven to 300ºF. Use parchment paper to ling cookie sheets.
Separate egg, set aside egg white in a small bowl for later. Cream together butter, sugar and egg yolk. Add vanilla, flour and salt. Mix well.

Shape dough into balls. Roll in egg whites and then roll in coconut, covering completely. Place on cookie sheet and bake for 5 minutes.

Remove cookies from over. With thumb, indent the middle of each cookie. Using a teaspoon place jam into the thumbprint. Back for another 8 minutes until done.
