2-3 cups cooked/shredded turkey meat
1/2 lb spaghetti
1/2 cup blanched slivered almonds
1/2-3/4 lb mushrooms
3 T dry sherry
3 T butter
2 T flour
2 cup turkey or chicken broth
1 cup heavy cream
grated parmesan cheese

Directions:

Preheat oven to 375º
Saute mushrooms (may add 2-3 cloves garlic) and add sherry.
Boil the pasta til al dente (it bakes for an hour so don't over cook pasta)
Add mushrooms, almonds, and turkey to pasta and mix well.
Make a cream sauce by melting butter and then stirring in flour, gradually add the broth then cream.
Stir with pasta mixture and place in greased baking dish.
Bake 1 hr (til heated through) and add parmesan to top in last 10 min.

This is a great use for after Thanksgiving turkey. Boil the bird to make the broth and use the leftover meat. Great with cranberry sauce and can be made a day ahead.
