4 Tbsp. olive oil in skillet for sauteing
1 1/2 cups diced onion
1 cup celery
1/2 cup red pepper
1/2 cup green pepper
1 tbsp. garlic
white wine
1 lb. lump crabmeat
1/2 cup scallions
1 cup parmigiano reggiano
4 tbsp. parsley
2 tbsp dijon mustard or creole mustard
2 Tbsp. Lemon juice
3 Tbsp. Old Bay Seasoning
1/2 cup mayo (homemade best) or eggs
1 1/2 cups breadcrumbs

2 eggs + 2 tbsp. water for dredging.

Directions:
Dice the onions, celery, peppers, and sauté in skillet with olive oil. After 5 minutes add the minced garlic. Season with salt and pepper. You can simmer in some wine at the end for a minute.
Put Crabmeat, diced scallions, parmigiano, parsley, mustard, lemon juice, old bay, and cooled vegetables in a large bowl. Mix. Form crabcakes, dredge in egg and water, and breadcrumbs.
Fry in olive oil over medium high heat.

This is a combo of different recipes that I put together for Christmas Eve. I served it with Lemon Aioli. They were a big hit.
