1/2 cup finely chopped onion
2 tsp. olive oil
1 cup uncooked long-grain brown rice
2-4 Tbs. fresh lemon juice
1/4 tsp. salt
2 cups water
3 cups finely chopped fresh spinach leaves

Directions:
Directions:
In a 2 quart saucepan, sauté onion in oil over medium heat until onion is tender, about 2 min. Stir in rice, juice and salt.
Add water. Bring to a boil. Reduce heat to low. Cover and simmer for 50 to 55 min., until rice is tender and water is absorbed. Stir in spinach. Cook for 30 sec., stirring constantly, until spinach is wilted.
