4 tbs. unsalted butter
1/2 of a medium-size red onion, thinly sliced
1/4 lb. smoked salmon, sliced and cut into small strips
1/4 cup brandy, optional (I never use this)
1 cup heavy cream
salt and fresh ground white pepper (I use already ground)
1 lb. fettuccine or tagliatelle
1 tbs. chopped fresh parsley
1/4 cup grated parmigiano

Melt the butter in a large skillet. When the butter foams, add the onion and sauté over medium heat until the onion turns lightly golden. Add the salmon and sauté a few minutes longer. Stir in brandy, if using. Cook until the brandy has evaporated. Add the cream and season lightly with salt and pepper. Simmer gently for 2-3 minutes. Turn off the heat.

Cook and drain the pasta. add it to the sauce in the skillet. Add the parsley and parmigiano. Toss quickly until blended on more than 30 seconds or it will dry out. You can add a bit more cream if it dries out. Serve immediately.
