1-1 1/2 lbs. Chicken breast (I filet and pound it myself)
1 medium onion chopped
2 garlic cloves chopped
3/4 - 1 cup flour seasoned with salt and pepper
1/8 cup lemon juice
1/4 cup white wine
2-3 T chopped parsley
Butter and Oil
Chicken Broth (if needed seems dry at the end)
1/3 stick butter
2-3 T. Capers

Directions:

Saute onion and garlic in olive oil until tender. Remove from pan, set aside.
Mix flour, salt, pepper and place in a flat bowl.
Dip slices and shake off extra flour. Brown lightly in butter (in the same pan as the onions). Add all the pieces back in pan with onions and garlic. Raise heat, add wine, lemon juice and capers. Will thicken slightly. Now is the time to add a little chicken broth IF NEEDED. Sprinkle with fresh parsley.
