1 large potato (8 oz) peeled and cut into chunks
2 large garlic cloves, finely chopped
3/4 tsp salt
3 TBS butter
1 C flour
1 TBS baking powder
1/2 tsp sugar
3 TBS chilled shortening
2/3 C sour cream
3 TBS snipped fresh chives or chopped green onions
3 TBS milk (for glaze)

Directions:
In a saucepan, bring potato, garlic, and 1/4 tsp of the salt with enough water to cover to a boil over high heat. Reduce heat to low and simmer for 20 minutes. Drain, mash potato with 1 TBS butter.
Preheat oven to 450º. Grease and flour a baking sheet.
In a large bowl, mix together the flour, baking powder, remaining salt, and sugar. Using a pastry blender cut in the potato, shortening, and remaining butter until it is coarse. Stir in sour cream and chives until a dough forms.
On a floured surface roll out the dough 3/4 inch thickness. Cut biscuits with 2 inch cutter and re-roll the scraps. Brush with milk.
Place 1 inch apart on the prepared sheet and bake until golden, about 12-15 minutes.

Variation: Use a mashed sweet potato instead with 3 TBS chopped pecans and omit garlic and chives.
