6 eggs
4 oz cream cheese, softened
1 tsp salt
1/2 tsp black pepper
1 1/2 TBS butter
6 green onions, finely chopped

Directions:
In a large bowl beat eggs, cream cheese, salt, and pepper with an electric mixer. In a large skillet, melt the butter over medium heat. Add green onions and saute until tender. Pour eggs into skillet and stir once to mix egg mixture and onions. Cook 3 to 5 minutes or until top is bubbly and edged start to brown. Using a knife or spatula lift up the edges of the omelet and tilt the skillet to allow the egg in the centure to run beneath the omelet. Cook 1 minute longer. Use a spatula to fold it in half. Reduce heat to low and cook 3 to 5 minutes longer or until center is set. Transfer to a warm plate, cover, and place in a 200º oven until ready to serve. Makes about 3 servings
