1 C sugar
4 1/2 TBS flour
dash of salt
3 eggs, separated
1 1/4 C water
2 TBS margarine
1/2 C lemon juice
2 tsp grated lemon rind
1/4 tsp cream of tartar
1/3 C sugar
1 9-inck bake pie shell

Directions:
Directions:
Mix sugar, flour, and salt; slowly add water and mix. Beat egg yolks and add to mixture. Cook on top of double boiler (over simmering water) stirring until thick. Cover and cook 10 minutes more. Add margarine, lemon juice and rind. Por into baked pie shell.
Make meringue by beating egg whites with cream of tartar until foamy., gradually add sugar and beat until stiff. Spread meringue on top of pie. Bake at 350º for 10 minutes or until meringue is golden brown.
