Pastry shells:
3 C flour, sifted
1 C shortening
1/2 tsp salt
6 TBS cold water

Filling:
grated rind of 2 lemons
1/2 C lemon juice
2 C sugar
1 C margarine
4 eggs, well beaten

Directions:
Directions:
Pastry shells: Mix salt and sifted flour. Cut in shortening with a fork. Add cold water. Press small amounts of dough into small tart pans (gem tart pant with a base diameter of 1 1/4 inches and rim diameter of 1 3/4 inches are the right size). Bake at 400º for about 5 minutes or until shells are lightly brown. Cool and set aside.

Filling: Combine lemon juice, rind, and sugar in the top of a double boiler. Add margarine. Heat over boiling water, stirring until margarine melts. Stir in beaten eggs. Continue to stir until mixture thickens, about 15 minutes. Fill baked shells with filling.
