4 tbs olive oil
2 medium onions chopped
2 carrots sliced
2 celery sticks
2 garlic cloves finely sliced
3 Tbsp flour
1 lb of minced venison, elk, buffalo or a one pound piece of meat
1 cup red wine, full bodied chianti is good
2 tbsp tomato paste
2 bay leaves
4 fresh sage leaves
Fresh sage for serving
Parmesan cheese for pasta
2 anchovy filets
1 1/2 cups of beef stock
Pappardelle pasta
Olive oil

I like to make this in a crueset or other oven proof pot with a lid. Cook the onions, garlic, carrots, celery for ten minutes. Cut the meat into small pieces, twice the size of a pea. Add some salt and pepper to the flour and toss the meat in the flour, if using ground meat then just do same, sprinkle over meat and put in the casserole to brown the meat. Add the wine and boil off for two minutes, Add the stock, anchovy filets, tomato, herb leaves, bring to boil.
Then cover with lid and put in the oven for an hour and a half to two hours, stirring about every 20 minutes or so,. Cook the pasta, drain, toss pasta with a tablespoon of butter, tablespoon of olive oil and 1/2 cup of parmesan cheese, add the pasta to the pot with the ragu sauce. Divide between plates and scatter some cut sage leaves and parmesan over.

I first discovered this recipe in 2010, at home and I remembered that a friend had given me a couple of packages of ground venison. I dediced to make this Jamie Oliver recipe and it was "knock the lights out great". I have made several other times with venison, buffalo, ground elk. It would also be great with lamb. So, one afternoon in Naples, Linda and a bunch of the "girls want to have fun girls" are having drinks after golf, men on the other side of the bar. I wander over and say to Aunt Linnie, I am going home to make dinner, all the girls see me say to her in response to what are you making, Elk Ragu, but its very noisy so they think I said, "I love you". They all love me.
