2 1/3 lbs boneless pork shoulder, well trimmed
3 cloves garlic
3 T sugar
3/4 t. chinese five-spice powder
4 1/2 T hoisin sauce
3 T honey
2 T plus 1 t dry sherry
3 T regular soy sauce
1 1/2 T. black soy sauce
1 T sesame oil

Quarter pork lengthwise into strips about six inches long and 1 1/2 inches thick.
In a large bowl whisk the remaining ingredients. set 1/3 of the marinade aside and cover and refrigerate it for basting the meat. add the pork to the remainder and toss to coat evenly. Cover with plastic wrap and refrigerate for six to eight hours turning pork several times.
Remove from refrigerator about 45 minutes before cooking. Position a rack in the upper third of the oven and preheat to 475 degrees. line a baking sheet with aluminum foil and place a flat roasting rack on the baking sheet. Put the pork on the rack spacing the pieces 1 inch apart to promote heat circulation. Discard unused marinade. Roast, basting every ten minutes with reserved marinade for 30-35 minutes. let the meat rest for ten minutes after removing from oven to finish cooking.
