1 lb carrots
2 C sugar
1/2 C corn or peanut oil
4 eggs
2 C flour
2 tsp baking soda
2 tsp baking powder
1/2 C coarsely chopped pecans

Frosting:
2 C confectioners sugar
1 (8 oz) pkg cream cheese
4 TBS butter, softened
2 tsp vanilla extract

Cake:
Heat oven to 325º. Trim, scrape, and grate the carrots. Measure them, there should be about 3 C. Set aside.
Combine the sugar and oil in the bowl of an electric mixer. Start beating. Add the eggs, one at a time, mixing well. Sift together the flour, baking powder, baking soda and salt. Add this to the oil mixture while beating. Add the grated carrots and nuts, blend well.
Lightly oil 3 9-inch cake pans. Line the bottoms with circles of wax paper. Oil the paper as well. Pour the batter into the pans and bake for 45 minutes.
Turn the cakes onto wire racks to cool. Remove the paper liners.

Frosting:
Sift the sugar into the bowl of an electric mixer. Add cream cheese, butter, and vanilla. Beat until smooth and creamy. Spread onto cake.
