2 c flour
1 c quick oats (uncooked)
1 t baking soda
1 t cinnamon
1 t salt
1 c butter
1 c brown sugar packed
1 c granulated sugar
1 egg slightly beaten
1 t vanilla
1 c solid pack canned pumpkin
1 c semi sweet (mini) chocolate morsels or raisins

Assorted icing (PB is good) assorted candy raisins and nuts to decorate

Preheat oven to 350 F. Combine flour, oats, baking soda, cinnamon and salt. Cream butter and sugars beating until light and fluffy. Add egg and vanilla, mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels. For each cookie drop about 1/4 - 1/8 c dough onto lightly greased cookie sheet, spread into pumpkin shape using a thin metal spatula. add a bit more dough to form stem. Bake 20 -25 min. until cookies are firm and lightly browned. Remove from cookie sheets; cool on racks. Decorate using icing or PB to affix assorted candies, raisins or nuts. yields 19 to 20 cookies if you use 1/4 c, 3 doz if you use 1/8 c. variation: use raisins instead of chocolate.
