Sauce:
3T Oil
1-2 t Chili Powder
1 t Cumin
2 T Flour
1 t. Vinegar
1/2 t Garlic Powder
1/2 t Oregano
1/2 t Salt
2 c. Water

Filling:
4c. Cooked Pinto Beans
15 oz Ricotta Cheese
4 T Chopped Green Onion
1/2 c. Chopped Green Pepper

Topping :
1 c. Grated Cheese

Directions:
Directions:
For Sauce:
Mix dry ingredients. Slowly add liquid and stir. Microwave until boiling. Stir and then simmer for five minutes. Set aside.
For Filling:
Mash filling ingredients together in a large bowl. Divide filling among flour tortillas and roll up. Place seam side down in a greased baking pan. Pour sauce over the tortillas and sprinkle cheese on top. Bake at 350 for 20 minutes.
