2 cups macaroni (or rotini or shells- whatever noodles you fancy)
1/2 cup butter
1/4 cup all purpose flour
1 3/4 cups milk
salt, pepper
8 oz American Cheese (about 12 deli slices)
Shredded cheddar cheese

Preheat oven to 375 degrees.

Cook macaroni or pasta 7-9 minutes then drain.

Stack cheese and cut into cubes, 1 in by 1 in

In a 3 quart sauce pan: Melt butter and mix with salt and pepper over medium heat. Blend in flour. Cook over low heat, stirring constantly until mixture is smooth and bubbly. Remove from heat. Stir in milk, heat to boiling stirring constantly. Once mixture is boiling, allow to boil for 1 minute, stirring constantly. Remove from heat. Add cubes of cheese and stir until melted. This will take some time.

Place macaroni in ungreased casserole dish. Pour cheese mixture over top then gently stir into the pasta. Add shredded cheddar cheese on top.

Cook uncovered for 30 minutes.

Feel free to add bacon because bacon makes everything better.

This is a crowd pleaser! Who doesn't love mac and cheese? Have fun and add different kinds of cheese. Another good Friday in Lent meal :)
