5 potatoes (red work best, any will do)
1/2 cup (1 stick) butter
6 cups chicken broth
2 cups heavy cream
4 tbs flour
pepper, salt, garlic
shredded cheddar cheese
bacon/bacon bits

Directions:
Directions:
Cut potatoes into small pieces- 1" or less. In a soup pot, melt 1/4 cup of butter (half the stick, save the other half for later). Stir in the potatoes and add seasoning to taste- pepper, salt, garlic, basil etc. Be generous with the seasoning because it will be diluted by the cream and broth. Cook potatoes over medium heat for about 3 minutes. Stir continuously. Add chicken broth and bring to a boil. Allow the broth and potatoes to boil for 10-15 minutes. Reduce heat to simmer and add the rest of the butter. Allow the butter to melt while you stir it in. Once the butter has melted, add the flour. Combine as best as possible- whisking usually helps but be careful not to break the potatoes. Stir in heavy cream and bring to a boil over medium-high heat. Once the soup is boiling, add some shredded cheddar cheese- usually about a cup. Allow everything to gently boil for about 5 minutes, then reduce heat to simmer. Add bacon bits or bacon pieces to the final soup and allow to sit for about 5 minutes as the broth thickens a bit. Serve with some shredded cheddar cheese and bacon bits on top.

This is a perfect winter time soup, perfect for after being out in the snow shoveling or sledding. Also lovely choice to serve the first time you have your parents and your parents-in-law over to your new house for dinner. ;) Hold the bacon and it's a great choice for Friday in Lent!
