3 oz. lemon Jell-O
1/2 tsp. salt
1 1/2 cup boiling water
8 3/4 can crushed pineapple, undrained
1 Tbsp. lemon juice
1 cup coarsely grated carrots
(opt.) 1/3 cup chopped pecans

Directions:
Directions:
Dissolve Jell-O & salt in boiling water. Stir in the undrained pineapple & lemon juice. Chill until slightly thickened. Fold in the carrots & pecans. Pour into a jello mold or serving bowl; chill in refrigerator until firm.

Very popular in the 1970's when Jell-o was all the rage. One Christmas, my mom made the entree & asked everyone to bring a side. That year we had Jell-O, Jell-O, Jell-O, & Jell-O. Yes, everyone brought a Jell-O mold. Thankfully, Mom made potatoes & green beans.
