1/2 lb. bacon, diced, cooked until crisp, then drained on paper towels (1/3 cup drippings reserved)
6 cups sliced red potatoes, cooked & kept hot
1/2 cup thinly sliced scallions with green tops

Dressing: 1/3 cup bacon drippings, 1 Tbsp. flour, 1 Tbsp. sugar, 1 1/2 tsp. salt, 1 tsp. celery seed, 1/2 tsp. freshly ground black pepper, 1/2 cup chicken broth, 1/4 to 1/2 cup apple cider vinegar

Garnish: minced parsley

Combine the cooked potato slices, scallions, & one half the cooked bacon bits. Keep hot & set aside.
Heat bacon drippings in a large, heavy skillet. Whisk in the flour, sugar, salt, celery seed, & black pepper until a smooth paste forms. Gradually whisk in the broth & vinegar. Continually whisk & cook until slightly thickened. Pour the sauce over the potatoes, scallions, & half the bacon bits. Gently toss together. Pour into a serving dish. Garnish with remaining cooked bacon bits & parsley. Note: May be refrigerated for later use & reheated before serving.
