Salad:
1 lb. rotini, or similar pasta, cooked al dente, rinsed in cold water, & drained
2 large tomatoes, chopped, drained
12 oz. jar artichoke hearts, drained & cut into pieces
1 bell pepper, seeded & chopped
3/4 cup red onion, chopped
5 oz. pepperoni slices, quartered
8 oz. feta cheese, crumbled*
Dressing: 3 Tbsp. olive oil, 1 Tbsp. wine vinegar, 1 crushed clove of garlic, 1/4 cup chopped fresh parsley, 1 tsp. salt (or to taste), 1 tsp. basil, 1/2 tsp. dried oregano, 1/2 tsp. pepper

In large bowl, combine salad ingredients. In a separate bowl, combine dressing ingredients. Add dressing to salad & gently toss until well-coated. Refrigerate until served.
*May substitute mozzarella or provolone cheese for feta.
