1/2 c. mashed potato about 2 medium potatoes
1/4 tsp. salt
1/2 tsp. Vanilla
1 c. peanut butter
1 lb. sifted confectionery sugar
4 c. semi sweet bits
1 T. oil

Directions:
Boil 2 peeled medium potatoes. When tested with a fork that they are done, drain and mash fine. Let cool Do not use any seasoning or milk in the potato. Measure 1/2 c. into a fairly large bowl. Gradually stir in the salt and confectionery sugar. Let stand until fairly firm. Add the vanilla and the peanut butter and mix well to incorporate. It should be firm enough to roll like meatballs. Make the balls no more than one teaspoon as they are very sweet. Roll the balls onto a tray with wax paper or parchment paper on it. Refrigerate for at least 1/2 hour or up to a day.
Melt the chocolate in a micro wave bowl until it is just melted. Mix in the oil .Put the bowl over simmering water either in a double boiler of over a pan of water.. Do not let the water touch the bowl with the chocolate.. Put toothpicks into the peanut butter balls. Dip the balls into the melted chocolate and cover them completely. Put the balls back on the wax paper. You could use a spoon or a fork to help remove them from the chocolate Remove the toothpicks.When complete put them in the refrigerator to firm up. Can be frozen or keep refrigerated until just before use. Take them out for a bit prior to serving so they will soften a bit.
