3 lg. baking potatoes, unpeeled
1/4 c. margarine
1 T. onion, grated
1 tsp. salt
1/2 tsp. thyme
1/8 tsp. pepper
1 (4 oz.) pkg. shredded cheddar cheese
1 T. fresh parsley, chopped

Directions:
Directions:
Thinly slice the potatoes and place in a greased shallow 2 quart baking dish. In a small saucepan, heat margarine, onion, salt, thyme and pepper until the margarine is melted. Drizzle over potatoes. Cover and bake at 425º for 45 minutes or until tender. Sprinkle with cheese and parsley. Bake uncovered 15 minutes longer or until the cheese melts.
