4 boneless skinless chicken breast halves
8 oz. low-fat plain yogurt
1 T. lemon juice
1 tsp. curry powder
1 clove garlic(pressed)
1/2 inch ginger root (peeled and pressed)
1 med. cucumber (sliced)
1/2 sm. red onion (sliced)
1 lg. carrot (julienned)
1/2 c. mayonnaise
2 T. mango chutney or apricot preserves
4 c. romaine lettuce (thinly sliced)

Directions:
Directions:
Place chicken in Ziploc bag. In a small bowl combine yogurt, lemon juice, curry, garlic, and ginger. Reserve 1/2 cup of yogurt mixture for dressing. Add remaining yogurt mixture to chicken. Marinate chicken in refrigerator for 2-4 hours. For dressing, add mayonnaise and chutney to reserved yogurt mixture; mix well. Grill chicken 12-15 minutes, turning once. Cut chicken crosswise into slices. Arrange lettuce, vegetable's and chicken on salad plates. serve immediately with dressing.
