2 c. heavy cream
3/4 c. whole milk
1 tsp. vanilla
1/4 tsp cinnamon
4 lg. egg yolks
1/2 c. sugar, plus 4 tsp.
1 c. pumpkin

Directions:
Directions:
Pre-heat oven to 300º. In a medium sauce pan, over medium low heat, mix the heavy cream, milk, vanilla, and cinnamon. Heat until small bubbles form, about 3 minutes. In another bowl whisk together the egg yolks and 1/2 cup of sugar until well mixed and a light lemon color. Add a bit of the hot cream mixture to the yolks, and whisk again, repeating until the cream is all mixed into the egg yolks and sugar. Whisk in the pumpkin and thoroughly combine the egg mixture. Place in ramekins baking dishes, place on a cookie sheet and place water in pan to create a water bath 1/2 way up the baking dishes. Place in oven and let cook 50-55 minutes or until the centers are a little jiggles. Allow custard to cool. Sprinkle with sugar and torch, gently brown the sugar until melted and crisp in place.
