3 T. Butter
2 T. Olive oil
3/4 C. Onion (diced)
1/2 C. Carrots (diced)
1/2 C. Celery (diced)
4 Cloves Garlic (minced)
Salt and Pepper to taste
1/3 C. All-Purpose Flour
4 C. Chicken broth
1 1/2 C. Half and Half
2 C. Cooked White Chicken (shredded or cut into small bites)
1 # Gnocchi
3 C. Fresh Baby Spinach (stems removed)
1 tbsp. Fresh Basil (chopped)
Fresh Grated Parmesan and/or Romano - topping

1. In a large soup pot or Dutch oven heat the butter and oil together over medium heat. Add onions, carrots, celery and garlic. Season with salt and pepper and cook until tender over medium-low heat about 10 mins., stirring often.
2. Cook the gnocchi separately in the chicken broth according to the package directions. Remove gnocchi from broth.
3.. Sprinkle the flour into the pot with vegetables, cook 3 mins, stirring often. Stir in the chicken broth1 cup at a time. Make sure you have 4 cups, (substitute with water if not enough), followed with half & half.
4. Add the chicken. Bring up to a simmer and maintain for 20 mins stirring often. 5. Add gnocchi to soup along with spinach. Simmer until spinach is wilted, stir in basil and season with salt and pepper. 6. Garnish each bowl with cheese.
