8-10 Medium Potatoes (peeled and cut into 1/2" cubes)
1 can Condensed Cream of Chicken Soup
1 1/2 C. Milk
1 pkg Dry Ranch Dressing Mix
2-4 C. Shredded Cheese (divided)
Salt and Pepper to taste
6 Bacon Strips (cooked until crispy and crumbled)
Green Onions or Chives

Preheat oven to 350º. In a large pot cover the potatoes in water and bring to a boil over high heat. Cook for 10-12 mins or until the potatoes are almost tender. Drain. Grease a 13x9 in. casserole dish. Pour potatoes in. In a bowl, mix soup, milk and ranch dressing, half of the cheese (depends on how much cheese you like) and add salt and pepper to taste. Pour over potatoes in the dish. Sprinkle with remaining cheese and bacon. Place in oven and bake uncovered for 25-30 mins or until the potatoes are tender. Garnish with green onions or chives.
