3 eggplants, medium size
1 large onion
1 bell pepper
1 clove garlic, minced
1/2 C cooking oil
1 lb ground meat
salt and pepper to taste
1/2 C parsley
1/2 C onion tops
1/2 C chopped celery
1/2 C flour
3 C cooked rice

Directions:
Directions:
Boil eggplants until tender, scoop out inside. Cook meat in 1 TBS cooking oil. Add onions, do not burn or overbrown them. Add 2 C water, gradually and let simmer for 20 minutes. In a separate pan use the rest of the oil and brown the flour, stirring constantly until golden. Add 2 C water, gradually. Add eggplants, garlic, pepper and celery then mix well, cook for 10 minutes. Combine meat and eggplant mixture. Then add green onion top and parsley, cook another 10 to 15 minutes. To serve, mix creole meat-eggplant with the 3 C of cooked rice.
