1 15 oz can black beans, drained and rinsed thoroughly
1 cup cooked quinoa (1/2 cup raw)
1/2 sweet onion, finely chopped
2 garlic cloves, finely minced
1 tablespoon tomato paste
1 teaspoon Chile powder
1/2 teaspoon cumin
1/4 cup fresh cilantro, chopped
3 tablespoons ground flax seed
juice of 1/2 lemon
1 tablespoon olive oil
1/2 teaspoon salt
Freshly ground pepper

For coating and frying:
1/4 cup fine grind brown rice
2 teaspoons olive oil
1/2 teaspoon lemon zest
dash of paprika
dash of salt
freshly ground pepper to taste

Directions:
Directions:
Mash black beans with a potato masher, a food processor or your hands. Half or more of the beans must be mashed really well or it won't hold together. Add the rest of the ingredients and mix thoroughly. Make into small patties.

Mix dry ingredients for coating. Heat oil in frying pan. Coat patties with coating and fry to a golden brown.
