Ingredients:  
• 2 cups fresh peas or one 10 oz. package
• 2 cups shredded lettuce
• 1 can (13 3/4 oz.) chicken broth
• 1/3 cup water
• 1/4 cup tomato juice
• 1/4 cup finely chopped green onion
• 1 Tbl. parsley
• 1/2 tsp. salt
• 1/4 tsp. pepper
• 1/4 tsp. dried thyme
• 1/2 cup cream or milk

Directions:
Directions:
1) combine peas, lettuce, broth, water, tomato juice, onion, 1 Tbl. parsley, salt & pepper and thyme in pot
2) bring to boil, reduce heat, simmer, covered, about 20 mins.
3) cool, then puree in blender
4) stir in cream or milk
5) chill to serve cold, or serve hot; garnish with remaining parsley

We used to make this soup to use up lettuce, peas and onions from our garden. You can freeze it after step 3 and then add in the milk or cream when ready to eat!. A great summer soup.
