Ingredients:  
1 tbsp olive oil
1 tbsp unsalted butter
1 pound sea scallops, patted dry
3 tbsp fresh lime juice
4 tbsp lime ginger butter chilled (recipe to follow)
1/4 cp walnut halves, lightly toasted .

LIme Ginger Butter -
4 tbsp butter at room temperature
2 tsp grated lime zest
1 tsp ground ginger
1/2 tsp salt
freshly ground black pepper to taste

Directions:
Directions:
Stir in lime juice and cook 1 minute. Then lower heat and stir in the Lime ginger butter 1 tbsp at a time. Cook just until a thick sauce forms. Stir in walnuts, sprinkle with parsley and serve - 2 servings

Lime ginger butter - Stir all ingredients together in a small bowl until smooth. Shape into a cylinder and wrap in foil or plastic wrap . Refrigerate until firm about 1 hr.
