1 large pork tenderloin
salt and pepper
1 tbsp butter
3 cloves garlic, minced
2 oz prosecution but into thin strips
1 tbsp fresh sage
1/4 c balsamic vinegar
1 c whipping cream
1 1/2 c chopped fresh tomatoes(about 2)
2 tbsp shredded fresh basil
freshly grated parmesan cheese

Cut pork tenderloin into 1 inch medallions, sprinkle with salt and pepper. Heat skillet add butter then brown pork turning once transfer to a plate. Add garlic prosciutto and safe to pan and salute for about 2 min or until prosciutto starts to brown. \Add vinegar and boil, scraping up bits stuck to pan. Stir in cream, bring to a boil reduce and simmer stirring often for about 5 min or until sauce is slightly thickened. Stir in pork and tomatoes, simmer for about 5 min. Season to taste with salt and pepper. Sprinkle with basil and parmesan cheese ( I skip the basil as good doesn't like the taste)

Serve with egg noodles or over rice. Awesome recipe. Very tasty.
