Creole Eggs Recipe

Brown together:
1 large onion
6 small sweet peppers
1 TBS butter
1 tsp salt
1 TBS sugar
1 TBS chili powder
1 tsp black pepper

Add: 1/2 C catsup
1 small can english peas




Directions:
Directions:
Cook together 15 minutes then combine with the following white sauce:
1 pt milk
2 TBS butter
4 TBS flour
Stir until well thickened---

Prepare 8 hard cooked eggs. Chop eggs and arrange in casserole layer of eggs, then a layer of the above mixture, until all is used. Sprinkle top with bread crumbs and dot with butter. Bake in a moderate oven 20 to 30 minutes, serve at once.
