2 eggs, separated
3/4 c. sugar
3/4 c. pumpkin puree
1 tsp.lemon juice
3/4 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1/8 tsp. salt

Filling:
1 pkg.(8 oz.) cream cheese, softened
2 tbsp. butter, softened
1 c. confectioners' sugar
3/4 tsp. pure maple syrup

Line a 15x10x1"sheet pan with waxed paper; grease the paper. Set aside.
Preheat oven to 375 F.

Beat egg yolks,1/2 cup sugar, pumpkin & lemon juice.
In another bowl, beat egg whites gradually adding remaining sugar till stiff peaks form.

Sift together remaining dry ingredients. Beat into pumpkin mixture. Fold egg whites in gently. Spread evenly onto sheet pan.

Bake 10-12 min. Cake will springs back when lightly touched. Cool for 5 min.

Turn cake onto a kitchen towel dusted with icing sugar. Gently peel off waxed paper. Roll up jelly-roll style, start at a short end.
Cool completely on wire rack.

In small bowl, beat the cream cheese, butter, icing sugar
and maple syrup until smooth.

Gently unroll cake. Spread filling evenly on cake. Leaving 1/2" border on edges. Re roll. Cover with plastic wrap. Freeze till firm.

Remove from the freezer 15 minutes before cutting. Dust with icing sugar, drizzle with a glaze, serve with ice cream or ice if desired.
