2 lb ham hock, pig tails, or bacon ends
1 pod garlic
2 small can tomato puree
small pod red pepper
2 TBS catchup or chili sauce
1 lb black-eyed peas
2 medium onions
1 bay leaf
celery
1/2 tsp sweet basil

Directions:
Directions:
Soak peas 1 hour. Boil meat 30 minutes in enough water to cover. Add spices
and tomato puree. Cover and slowly simmer 3 to 4 hours or until done. Serve with rice and a tasty cole slaw or vegetable salad and corn sticks. Serves 6.
