1/4 cup Balsamic Vinegar (if you have Cranberry Balsamic - great!)
1 - 2 tbsp. finely chopped Dried Cranberries
3/4 tsp white sugar
1 tsp Dijon mustard
1/2 tsp Salt
1 Clove Garlic - minced
Freshly ground Black Pepper
1/2 cup Extra-Virgin Olive Oil (* or use 1/4 oil & 1/4 Blood Orange Oil) :)

NOTE: You can use raspberries or dried cherries in place of cranberries.

Salad Greens or Spinach
Toasted Pecans

Directions:
Directions:
Whisk vinegar, cranberries, sugar, mustard, salt, garlic and pepper together in a bowl until the sugar and salt are completely dissolved.

Stream oil into the mixture while whisking continually, continue whisking until the oil emulsifies into the vinegar.

Put over fresh salad greens or great with spinach salad.

I like to top it with finely shredded Asiago cheese (or similar) and a few toasted pecans.

A great dressing!! Especially around a festive occasion and you can change it up with raspberries, dried cherries, strawberries - use your imagination.
