Chicken Pot Pie Recipe

2 pie crust (top & bottom)
1/3 C Butter
1/3 C onion
1/3 C Flour
1/2 tsp. Salt
1/4 tsp Pepper
1 1/2 C Chicken Broth
2/3 C Milk
2 1/2 C. shredded cooked Chicken
2 cups mixed vegetables (if frozen, thaw first)

Directions:
Directions:
Heat oven 425º. Place bottom pie crust in pie pan.

Melt butter in pan, add onion and cook for 2 minutes. Add flour, salt and pepper, stir until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.

Add Chicken and mixed vegetables, mix well. Remove from heat. Pour chicken mixture into pie pan with crust. Top with 2nd crust. Seal edges and cut slits in the top of the crust.

Bake for 30-40 minutes. Let stand 5 minutes.
