I lb ground beef
1/2 large onion, minced
1/3 to 1/2 large poblano pepper, minced
2 cloves garlic, minced
1 tsp salt
1 – 1 1/2 tsp pepper
1 – 1 1/2 tsp fresh ground cumin
1 – 1 1/2 tsp chili powder
1 ear fresh corn or about 1 C kernels
2 C grated Monterrey Jack Cheese
1 raw pizza dough for 12 inch pizza

Brown meat along with onion, pepper, garlic. Add spices and cook for 5-10 minutes, starting with 1 tsp each and adjusting to taste. Using a sharp knife, scrape corn kernels off cob directly into the skillet. Cook about 5 minutes and turn down heat to low for a few more minutes. Let sit while wrestling with the dough.

Divide pizza dough into 4 portions. Coat a board with cornmeal and roll out a portion at a time, each about 6-7 inches across. Place about ¼ of meat mixture on half of the circle and top with ½ C cheese. Fold over and crimp or roll edges to seal. Sprinkle a small amount of corn meal on a baking sheet. Bake 2 at a time on one sheet in a 425º oven about 25 minutes or until puffy and browned
