1 large head celery cabbage or small white cabbage
3 tablespoons salt
4 green onions and tops
1 large clove garlic, minced
1 dried hot red chili (about 2" long), crushed
1 teaspoon grated fresh ginger root

Directions:
Directions:
Cut cabbage into pieces 1" x 1". Sprinkle 2 tablespoons of salt on the cabbage, mix well, and let stand for 15 minutes.

Cut green onions and tops (1 1/2" lengths, then cut lengthwise in thin slices).

Wash salted cabbage three times with cold water.

Add onions, garlic, chili, ginger, and 1 tablespoon of salt to the cabbage. Add enough water to cover. Mix well, cover, and let stand for a few days.

Taste everyday and mix.

When acidic enough, cover and refrigerate for up to 2 weeks.

Makes 1 quart
