Using a sharp knife cut holes in the roast about 4 to 5 inches apart. Take 1 bud of garlic and slice thinly, place each piece of garlic far down into the knife cuts and pinch closed. Salt and pepper to taste and flour well on all sides.

Heat oven to 325º. Use an iron roast pot or dutch oven with a lid. Put 4 TBS oil and some flour into the pot, brown well. Sear roast on both sides. Turn the heat down and pour a 6 oz bottle of coco-cola over the roast plus 2 or 3 bottles worth of water. (This means about a cup of coke and 2-3 cups of water). Enough to cover the roast. Bring to a boil and cover tightly, transfer to hot oven and cook about 3 1/2 to 4 hours. Turn roast once during cooking. Roast is done when testing fork proves meat is tender

This makes it own gravy so let it thicken. More water may be added if too much evaporates.
