1 t sesame oil
3/4 lb char siu (diced)
1 can water chestnuts (diced)
5 each shitake mushrooms (diced)
3 T green onion (chopped)
4 t shoyu
2-1/2 T sugar
2 t flour
2 t cornstarch
1/4 c water

Skin:
1-1/2 c wheat flour
1/2 c tapioca starch
1-1/4 t boiling water

Filling:
In pan, heat oil and stir fry char siu. Add chestnut, mushrooms, then green onions. Add shoyu/sugar mix.
Mix flour and cornstarch with water.
Add to pan, cook till thicken.

Skin:
Combine flour and starch. Mix in water; knead quickly while hot.
Divide dough into two. Cover one.
Roll into ball, divide into serving pieces.
Flatten with knife w/oil; flip over.

Add mix, fold in half and pinch edges together.
Steam 10-15 min in bamboo steamer.
